15 - 1 package refrigerated pie crusts (2 crusts, about 14 oz)

# How To Make:

01 - Preheat oven to 400°F.
02 - In a large skillet over medium heat, melt butter. Add onion, carrots, and celery; sauté for 5 to 6 minutes until softened.
03 - Stir in minced garlic and cook for 1 minute until fragrant.
04 - Sprinkle flour over vegetables and stir continuously for 1 to 2 minutes to form a roux.
05 - Gradually whisk in chicken broth and heavy cream. Simmer, stirring constantly, for 4 to 5 minutes until thickened.
06 - Add diced chicken, peas, thyme, oregano, and red pepper flakes if using. Season with salt and pepper. Stir well, then remove from heat.
07 - Roll out one pie crust and fit into a 9-inch pie dish, trimming edges as needed.
