I have made this for my family many times and we always enjoy the creamy savory flavors combined with tender chicken and fresh vegetables
Ingredients
- Meats: 1 lb (450 g) boneless skinless chicken thighs or breasts cut into bite-size pieces
- Vegetables: 1 medium onion finely chopped 2 cloves garlic minced 2 medium carrots diced 1 cup (150 g) frozen peas 1 cup (100 g) mushrooms sliced (optional)
- Grains: 1 cup (200 g) long-grain white rice rinsed
- Dairy: 1 cup (240 ml) whole milk or heavy cream 2 tbsp (30 g) unsalted butter
- Liquids: 2 cups (480 ml) low-sodium chicken broth
- Spices & Seasonings: 1 tsp salt or to taste 1/2 tsp black pepper 1/2 tsp dried thyme 1/2 tsp paprika
- Garnish: 2 tbsp fresh parsley chopped (optional)
Instructions
- Step 1:
- Heat the butter in a large pot or Dutch oven over medium heat Add the chicken pieces and cook until lightly browned about 4-5 minutes Remove chicken and set aside
- Step 2:
- In the same pot add the onion carrots and mushrooms Sauté for 3-4 minutes until softened Add the garlic and cook for another minute
- Step 3:
- Stir in the rice salt pepper thyme and paprika Cook for 1 minute to toast the rice slightly
- Step 4:
- Pour in the chicken broth and milk (or cream) Bring to a gentle boil
- Step 5:
- Return the chicken to the pot Reduce heat to low cover and simmer for 18-20 minutes stirring occasionally until the rice is tender and most of the liquid is absorbed
- Step 6:
- Stir in the peas and cook covered for another 3-5 minutes
- Step 7:
- Remove from heat Let stand covered for 5 minutes Fluff with a fork and garnish with fresh parsley if desired
