01 - 8 slices whole wheat or white sandwich bread

02 - 4 oz cream cheese, softened
03 - 2 tbsp mayonnaise
04 - 1/4 red bell pepper, finely diced
05 - 1/4 yellow bell pepper, finely diced
06 - 1/4 cucumber, peeled, deseeded and finely diced
07 - 1 small carrot, peeled and grated
08 - 2 tbsp chives or green onions, chopped
09 - Salt and freshly ground black pepper, to taste

→ Decoration (optional)

10 - 2 cherry tomatoes, sliced
11 - 2 tbsp pomegranate seeds
12 - Fresh basil or parsley leaves

# How To Make:

01 - Using a star-shaped cookie cutter, cut a star from each slice of bread and set aside the scraps for another use.
02 - Combine softened cream cheese and mayonnaise in a bowl until smooth.
03 - Fold in the diced red and yellow bell peppers, cucumber, grated carrot, and chopped chives; season with salt and pepper.
04 - Spread a generous layer of the vegetable cream cheese mixture onto half of the star-shaped bread pieces.
05 - Cover with remaining bread stars, then gently press cherry tomato slices, pomegranate seeds, and fresh herbs onto sandwich tops to resemble jewels.
06 - Arrange sandwiches on a platter and serve immediately or cover and refrigerate for up to 2 hours before serving.
